I want to be able to run Rift at Ultra settings and was wondering if anyone could tell me where my bottleneck is at or any suggestions on improving my preformance. Please help!

Alot of people are reporting issues with SLI scaling so maybe your only getting 1 gtx 275 worth out of that 2x gtx 295

I guessing the quad sli is the issue. I have dual gtx 460s and have no issues on ultra. Maybe try just running with 1 card and see what happens.

yep... those things are $350.00 used

Things may get updated in time for quad sli support, if thats even the problem for sure.

After reading a little more and viewing comments posted in the forums and also based on what I have observed with my year old gtx 460s, I would definitely agree that SLI doesn't scale as well as it should and that you don't see the performance boost you would normally see with more modern games. From what I understand, RIFT is a new mmo, but it's based on older technology. Looks great but they have some work to do when it comes to SLI.
