Video Card NVIDIA GeForce GTX 570 - 1.2GB
    Motherboard Gigabyte GA-870A-UD3 -- AMD 870 w/ 2x PCI-E 2.0 x16

Baring any driver or other compatibility/optimization issues I see no reason why it wouldn't run at higher settings on a single monitor.

Likewise. Though a 600-650W PSU would be adequate for such components, with some headroom. 800W is more than is truly necessary.

i'd go with the HD 6970 instead of the GTX 570

Personally i would take an intel system over amd (cpu wise ofc), but that is mostly because i have a very bad experience with amd cpu's

I wouldn't go with a generic PSU, stick with a name brand that is 80+ certified.
