What is your favorite game besides MMOs?

As for the others:

2.RPGs - Fallout 3, Red Dead Redemption, Borderlands (I consider this RPG, though it has shooter elements).
3. Hack n' Slash - Diablo (1 and 2, so far), Dante's Inferno.
4. RTSs - Starcraft (1 and 2), Warcraft (3, mainly).
5. Shooters (first and third person) - Army of Two (both, though the first one more), Bad Company (first).

Okay, that's more than one game - I tried to limit it.

Mario RPG Legend of the Seven Stars (Geno is win), FF3, FF9, FF7, Ninja Gaiden II (NES), Super Smash Bros for the N64, Halo, and Goldeneye.

I am a pretty big fan of Descent: Journeys in the Dark. Currently about 1 month in to a Road to Legend Campaign and having a blast with it!

I've been a paying member for like 10 years now... it's a massive community of chess players of all skill levels. You can join for free, and have ads on the sides of each page, or pay a subscription and get rid of the ads. It keeps track of your games on the server, so you can set time limits for each move (up to many days) and make your moves when you have a chance. It keeps track of all kinds of stats and has a pretty good ratings system. I love being able to have many games going at once against players all over the world.

I'm fozzik on that site, as well, and I'll take all challenges. Come check it out.

As for other games, I really enjoy shooters with a strong story line and physical puzzle-type games. Anything like Half-life 2 or Myst.

I've always been a fan of board games like Scrabble or Snatch It.

But other than MMO's, I do enjoy playing historic Real-Time Strategy games like the Anno series. I think my favorite RTS would be Knights of Honor.
