I think Paladin is largely a crutch you can do without later in the game. Block is chance based, so is inherently spikey in fights where mitigation matters (not many)
I use 31 Warlord, 24 Void Knight, 11 Reaver to do T2s. It's fine and more fun.
Reaver and void knight get you steady mitigation that should always be up and works against all damage. Paladin gives you block and a little more magic mitigation. If you can get away with reaver/vk/paladin you're better off by far mitigation wise. However warlord feels pretty much mandatory for threat purposes, not to mention one of the best tools warrior tanks bring to the table - yanking a mob every 8 seconds.+Block disagrees as well.
But you can still run without Pally (especially in the current experts).
I wouldn't recommend it for raids however (unless you really don't like your healers or yourself).
My current raid tanking build is 18 warlord, 27 vk, 21 reaver. It works.

I'd just like to add (beyond the time limit for editing) that it really sucks how much awesome stuff is spread across 4 tank souls, and how the awesome-er stuff is so far up in the tree you can't ever get to it. No matter what you do you're missing something.
