Seeing as most of the a Riftblades damage comes from elemental damage does that mean stats like strength and attack power do not boost a Riftblades damage?

No, stats will still affect your damage, but your weapon damage doesn't effect Riftblade damage output. Which is why it's labeled the leveling up type tree/non-scaling tree.
Strength and AP are also weaker than dex for nearly all warrior builds.
Yeah, you want to go for endurance and dex for most warrior builds, riftblade included. Crit/HP is more important than a pathetic amount of damage added.
Wouldn't stacking attack power work as well as dexterity and endurance?

AP does indeed affect your ability dmg, so Str stacking also helps, especially since it adds to your parry rating (which has some synergy with RB).
Personally I just roll with sword n board, focus on str and end (but always be sure not to ignore dex, at least get some dex runes for shoulders if nothing else, or some scrolls), and it's been working great both in pve and pvp.
It also depends on how you play your riftblade and what souls you are combining it with.....
Strength can affect a riftblade very much so if you run it with paladin, because it effects blocking....
Dexterity/Endurance are great.....

What about those items that proc off of physical attacks or spells cast (like +DMG when using the respective attack)? Which are RB attacks considered?
Despite people saying that riftblade doesn't benefit from strength, they are quite wrong as all our strikes are based off of weapon damage (ie. weapon damage plus damage increased from attack power) and also our finishers do scale somewhat with attack power, but not all that amazing. This is why most people willl tell you to stack dex instead of strength, because while riftblade does scale with strength, you will see a much bigger increase in dps from going with more crit, along with much more power regeneration/cost reduction from crits.
I just need to know the calculation values of how much attack power contributes to Riftblade ability damage. It seems like it's rather low but I'm not really sure. I have mostly tank gear and it's strength heavy and doesn't give much of a damage boost to riftblade abilities.
EDIT: I'm going to focus on getting dex, endurance, phy. crit, and strength in that order for my pvp gear if attack power isn't that big of a contributing factor.
