Just patching the game then I'll be in game ready too rock and roll, sadly still deciding between Warrior: Paladin as a tank, or Shaman.. been literally watching videos the whole time trying to gather as much information for which I'll choose!

I haven't really tried the souls you named, enjoying my Cleric still (only played Cleric and a little bit of Rogue on BETA), but up till now it seems your best choice would be to go as a tank.

Then again, you should pick what you like most - not what the community needs/likes most, so it's all up to you!
